Erdinger Kristalweiss Style (no-boil beer kit recipe)

This flavourful wheat beer is reminiscent of the famous German Erdinger Kristallweiss. Makes 20 litres.

Add about 3 liters of hot water to a cleaned and sterilized fermenter. Add the beer kit and liquid malt extract and stir to dissolve. Top up with cold water to 20 liters and pitch the Fermentis yeast. Discard the yeast supplied with the beer kit or put it aside for use with another brew.

Ferment as usual. Note that the fermentation temperature will have a significant effect on the flavour of the beer. The temperature range of this particular yeast is between 15 and 24°C. At the low end of this temperature range the yeast will produce more spicy, clove-like flavour notes, while at the high end there will be more fruity character (especially banana) in the flavour profile. Temperatures between 15 and 24°C will produce a combination of the two.

After 3 days of fermentation, add the hops. Once fermentation is complete, bottle in clean, sterilized bottles, adding carbonation tablets or drops as usual. Let mature at room temperature for at least 4 weeks.
